This healthy and refreshing salad is a great shared plate for an at-home date night. It’s light and super tasty. Hanley’s Balsamic Vinaigrette is the perfect addition.


  • Arugula
  • Beefsteak Tomato
  • Basil
  • Fresh Mozzarella 
  • 1 Small Chicken Breast
  • Olive Oil
  • Hanley’s Balsamic vinaigrette
  • Garlic Powder
  • Salt (Pink Himalayan Salt is recommended)
  • Pepper


  1. Preheat oven to 350
  2. Drizzle olive oil in a glass baking dish, put chicken breast in the dish and add garlic powder, salt and pepper
  3. Bake chicken for 30 minutes at 350
  4. While chicken is baking, slice tomato and fresh mozzarella
  5. Add arugula as a base for the salad and drizzle lightly with olive oil
  6. Add sliced tomato and fresh mozzarella 
  7. Add fresh basil
  8. Once chicken is fully cooked, slice it and add it to the salad
  9. Drizzle with olive oil and add salt and pepper
  10. Pour a side of Hanley’s Balsamic Vinaigrette or drizzle it on top of the salad
