Have you been on a meal prep kick? Or have you been trying to get on a meal prep kick? This Chilled Orzo Pasta Salad recipe is super easy to make in advance and holds up really well throughout the week. It’s a super tasty and satisfying meal. We hope you love it!
Ingredients:
- Orzo pasta
- Arugula
- Cherry tomatoes
- Parmesan cheese
- Olive oil
- Salt and pepper
- Hanley’s Garlic and Red Wine Vinaigrette
Directions:
- Bring a pot of water to a boil and add orzo pasta, boil for 9 minutes and then strain orzo
- Refrigerate pasta for at least 3 hours
- Dice cherry tomatoes and add to a bowl with arugula and orzo pasta
- Add olive oil so the orzo pasta does not stick together
- Toss with Hanley’s Garlic and Red Wine Vinaigrette
- Top with salt, pepper and parmesan cheese
