A Fall-inspired vegan salad with quinoa, apple, arugula, Seedsation salad topper, and Hanley's Sensation dressing. Perfect for a light lunch or as a side salad!
Ingredients:
- 1 cup quinoaÂ
- 1 tsp olive oilÂ
- 2 cups waterÂ
- Salt and pepperÂ
- 2 cups arugula or mixed greensÂ
- ½ honeycrisp apple, thinly slicedÂ
- â…› cup red onion, thinly slicedÂ
- 2 tbsp fresh parsley, chopped
- 1 tbsp Seedsation salad topper
- 2 tbsp Sensation dressing
Directions:
- Cook quinoa: add 1 cup of dry quinoa to a fine mesh strainer and rinse well. Add 1 tsp olive oil to a small pot and turn heat on medium-high, then add quinoa. Stir until quinoa is very lightly toasted, about 3 minutes. Add 2 cups water and salt and pepper to taste, and turn heat down to medium-low. Add lid and let quinoa cook for 20 minutes.Â
- Meanwhile, prepare salad ingredients: thinly sliced honeycrisp apple and red onion. Chop parsley.Â
- Assemble the salad: add arugula/mixed greens to a bowl, and top with ½ cup quinoa, apple, onion, parsley, Seedsation salad topper, and Sensation dressing. Toss well to combine.Â
