Loaded Potato Soup

You know what Fall often means... Soup, soup, and more soup. There are fewer things more comforting and satisfying than a bowl of hot soup on a chilly Fall day. This Loaded Potato Soup is hearty and tasty.

Ingredients:

  • Small Yukon Potatoes
  • Diced Carrots, Celery, and Onion
  • Chicken or Vegetable Broth
  • Half and Half
  • Hanley’s Bacom Bits
  • Shredded Cheddar Cheese
  • Salt and Pepper 
  • Garlic Powder
  • All-Purpose Flour
  • Butter

Directions:

  1. Boil potatoes in a pot of water until fully cooked
  2. Sautee diced carrots, celery, and onion with 2 tbsp butter, ¼ cup all purpose flour, salt, pepper and garlic powder
  3. Add potatoes and begin to mash/soften them
  4. Add 1 carton of chicken or vegetable stock
  5. Add 1/2 small carton of half and half
  6. Simmer covered for 2 hours, stirring occasionally
  7. Top with Hanley’s Bacom Bits and shredded cheddar cheese
