You know what Fall often means... Soup, soup, and more soup. There are fewer things more comforting and satisfying than a bowl of hot soup on a chilly Fall day. This Loaded Potato Soup is hearty and tasty.
Ingredients:
- Small Yukon Potatoes
- Diced Carrots, Celery, and Onion
- Chicken or Vegetable Broth
- Half and Half
- Hanley’s Bacom Bits
- Shredded Cheddar Cheese
- Salt and Pepper
- Garlic Powder
- All-Purpose Flour
- Butter
Directions:
- Boil potatoes in a pot of water until fully cooked
- Sautee diced carrots, celery, and onion with 2 tbsp butter, ¼ cup all purpose flour, salt, pepper and garlic powder
- Add potatoes and begin to mash/soften them
- Add 1 carton of chicken or vegetable stock
- Add 1/2 small carton of half and half
- Simmer covered for 2 hours, stirring occasionally
- Top with Hanley’s Bacom Bits and shredded cheddar cheese
