This recipe takes a healthier, lighter approach to a backyard BBQ favorite-- potato salad! It’s not your typical potato salad but it’s delicious and satisfying in its own way.
Ingredients:
- Hanley’s Red Wine Vinaigrette
- Plain Greek Yogurt
- Yukon Potatoes
- Red Potatoes
- Celery
- White Onion
- Lemon Juice
- Cilantro
- Parsley
- Salt, pepper, and garlic powder
Directions:
- Boil small yukon and red potatoes in a pot of water for 20 minutes
- Cut celery, white onion, parsley and cilantro
- Once potatoes are boiled, allow them to cool and cut them into halves
- In a separate bowl, mix equal parts plain greek yogurt and Hanley’s Garlic Red Wine Vinaigrette. Add pepper and a very small amount of lemon juice. Whisk until evenly mixed
- Mix all of your ingredients together and chill in the refrigerator for at least 2 hours
