Imagine a delicious bruschetta– fresh tomatoes, basil, garlic, Hanley’s Balsamic Vinaigrette– but on top of baked chicken. This recipe is a super healthy dinner choice and it’s loaded with flavor.Â
Ingredients:
- Â 2 small chicken breasts
- Tomatoes (We recommend fresh San Marzano tomatoes)
- White Onion
- Fresh Garlic
- Basil
- Cracked Black Pepper
- Olive Oil
- Hanley’s Balsamic Vinaigrette
Directions:
- Preheat the oven to 375℉
- Gently use a food chopper to dice tomatoes, white onion, fresh garlic and basil into small pieces
- Add to a jar with 2 tbsp of olive oil and Hanley’s Balsamic Vinaigrette
- Place jar of bruschetta in the refrigerator until you are ready to use it
- Top uncooked chicken breast with bruschetta
- Bake chicken breast in the oven for 25-30 minutes until fully cooked

Pro Tip: We recommend preparing your bruschetta at least 6 hours in advance allowing the tomatoes, onion, garlic and basil time to absorb the flavors of the olive oil and Hanley’s Balsamic Vinaigrette. Although you can absolutely make the bruschetta right before using it on your baked chicken, we prefer the flavors of bruschetta made a handful of hours in advance.
