Strawberry Feta Arugula Salad


This light and fresh Strawberry Feta Arugula Salad is a great way to get your sweet and salty fix. It features peppery arugula, sweet strawberries, salty feta cheese, and crunchy pecans for a perfectly balanced salad. 

Ingredients:

  • 4 cups arugula + spinach blend 

  • 1 cup strawberries 

  • ½ cup pecans 

  • ¼ cup shallot, thinly sliced 

  • 2 tbsp basil, thinly sliced

  • ½ cup feta cheese, crumbled 

  • Salt & pepper to taste

  • ½ cup Hanley’s Strawberry Vinaigrette

Directions:

  1. Wash, dry, and chop strawberries into bite-sized pieces.
  2. Chop pecans and toast in a frying pan until fragrant, about 5 minutes.
  3. Thinly slice shallot and basil.
  4. To a large bowl, add arugula + spinach blend, strawberries, pecans, shallots, basil, feta cheese, salt & pepper, and Hanley’s Strawberry Vinaigrette. Toss until well combined.
  5. Top with more feta cheese and basil if desired.

Pro Tip: This makes a great side salad, but it could also be an entree with a topping of grilled balsamic chicken breast or salmon!
