The Chicken Taco Salad Bowl 🌮🥗 will satisfy your tastebuds with crispy crunchy veggies and mouth-watering taco-seasoned chicken. But our favorite thing about this salad? The combination of citrus-y lime juice with Hanley’s Avocado Dressing.
Ingredients:
- Chicken
- Brown Rice
- Spinach
- Corn
- Black Beans
- Roma Tomato
- White Onion
- Green Bell Pepper
- Taco Seasoning
- Lime wedge
- Hanley’s Avocado Dressing
Directions:
- Preheat oven to 350℉
- Drizzle olive oil in a glass baking dish, put chicken breast in the dish and add garlic powder, salt and pepper
- Bake chicken for 30 minutes at 350℉
- While chicken is baking, cook brown rice
- Heat up corn and black beans in a small pot
- Dice tomato, white onion, and green bell pepper
- Prepare salad with spinach, tomato, white onion, corn, black beans, and brown rice
- Once chicken is fully cooked, use a fork to shred it
- Add chicken, chicken drippings from the baking dish, taco seasoning, and green bell peppers to a pan and heat on medium for 5 minutes
- Add chicken and peppers to the salad
- Pour a side of Hanley’s Avocado Dressing or drizzle it on top of the salad
